What started as a home kitchen obsession with a single jar of wild yeast has become a small bakery dedicated to the slow craft of sourdough. Every loaf begins with our starter — fed twice daily, alive and waiting — and ends with a crackling crust pulled from the oven before sunrise.
We mill our own flour. We source organic grain from regional farms. We ferment for 24 to 48 hours, not because it's trendy, but because that's what bread needs to taste like something real. No commercial yeast. No shortcuts. No additives.
